Broad Bean, Bacon and Feta salad.
As many broad beans as you have picked that day – blanched (for only a few minutes in boiling water and refreshed quickly in cold water) and skinned A pack of feta cheese in oil and either herbs or peppers or similar About a similar amount of bacon as you have of broad beans – cooked under a grill or in the oven until just crispy. Combine all ingredients! This can then either be served as a side dish or by adding it to salad leaves (watercress, rocket, spinach etc) it becomes a main course – particularly tasty when accompanied by nice bread.
