Beetroot ColeslawRaw beetroot, grated, has a taste completely different to that of the cooked version – it doesn’t seem to suffer from that earthy taste that discourages so many people (including me!) from eating it. (This is a particular shame for allotmenteers as it is so easy to grow!) The addition of carrots and apples also helps! To Make Take as much Beetroot as you want – and peel it (if you peel beetroot under a running tap it doesn’t stain your fingers) and then do the same to a similar amount of carrots and apples. Ideally then throw the lot into a food processor and whiz vigorously. (if not – grate by hand – its works just as well – just takes a bit longer.) Tip out into a bowl and add balsamic vinegar and preferably some of those lovely golden raisins you can buy in Julien Graves.
